my first ever paleo banana muffins
side note: nothing tastes like the "fake"good food we crave BUT this muffin was real and it was really good. i can do this muffin. we ate them right out of the oven with real butter and organic apple butter. i sent one with grace in her lunch box with some apple butter in a little container:)
we made asparagus on night with olive oil salt and pepper. so good
we eat lots of deviled eggs. real eggs that aren't on FOOD INC:) with real mayo mustard salt & pepper you can eat this for breakfast too. we do
cauliflower for the cheeseburger soup. you cook until tender in the chicken stock then i blended it together in my ninja
0ne of the hardest things is living in your pain and not having the drug of choice to numb it i had to feel..it had been a long time. feelings of boredom, sadness, anxiety and fear and even happy i wanted to eat.
it was like my whole body was zipping and touching my environment. it was crazy at first i didn't say anything because i thought i might be imagining it but i wasn't the next day..it was even better. i worked longer and was more focused. i cooked dinner and was still ticking...instead of taking a licking and craving the bed
the severe cravings like watching commercials of sonic blasts and pinning on pinterest no longer make me cringe. seems like on day 8 there was a shift. i had turned the corner.
and yesterday was more of the same i am sold! i am going all in on wheat free and minimal sugar..baby steps

we bought lots of fun containers to store & organize our cooked food
we are cooking everyday now. every meal it makes more of a mess for me to clean and more of my time that i am having to give other things up but you know what? i am seeing and feeling the consequences of eating clean i hope i stay with it. it feels good
we made Cheeseburger Soup last night and let me tell you. it was AMAZING! here is the recipe
4 Cups chicken broth, divided 1/2 head cauliflower, cut into florets 1 TB butter or coconut oil..( i used butter) 1 small onion, chopped 1/2 lb. ground beef 1 TB minced fresh parsley ( i used dried)
1/2 tsp sea salt. i used a little more 1/4 teaspoon paprika. ( i was out ) 1/8 tsp ground black pepper 1 TB coconut flour 1/2 shredded cheddar cheese ( more for topping ) sour cream ( optional ) my addition nitrate free bacon, crumbled ( optional ) my additionIn a large saucepan, combine 33/4 cups of the broth and the cauliflower. Cover and bring it to a boil over high heat. Reduce the heat to medium low. Cook for 15 - 20 minutes, or until the cauliflower is tender when pierced with fork. Meanwhile, in a medium skillet over medium high heat, heat the butter or oil. Cook the onion, stirring occasionally , for five minutes, or until golden. Crumble in the beef. Cook, stirring occasionally, for 8 minutes, or until no longer pink. Stir in the parsley, salt, paprika, and pepper. Remove from the heat and set aside. Transfer the cauliflower mixture to a food processor or blender and puree until smooth. Return to the saucepan. In a small bowl, whisk the coconut flour with the remaining 1/4 cup broth until smooth. Gradually add to the cauliflower mixture and cook, whisking constantly, over medium heat for 3 minutes, or until slightly thickened. Whisk in the cheese just until it melts. Remove the pan from the heat. stir in the reserved beef mixture Serve with optional toppings if you want.
my kitchen was a mess after this.
i made real chicken stock instead of using a boxed stock and it rocked! we also added sour cream and extra cheese on top. nitrate free real bacon crumbled on top would have been good too. a good thing about eating super low carb and wheat free is you can eat real butter whole milk, sour cream, cream cheese. it is crazy. nikki has lost at least 50 lbs! her hair and skin look 100% better. i can't tell you what changes are occurring around here girls!

we will keep sharing how it is going each week. i am encouraged today. i hope this will encourage you to look at what you are nourishing your body with and think of ways you can care for yourself better. even if it is one little thing you are worthy to be cared for....
